Thanksgiving 2009.. Flop?!?! :)

Hey bloggers! I've been enjoying everyone's Thanksgiving posts, and figured I better get my picture's edited and blogged about tonight. I must say some blogger's entire Thanksgiving spread looked beautiful, especially the "turkey." Thanksgiving this year was just my mom and I. We had plans to see a movie, go shopping at the Forum Shops, or go to our friends house for wine and dessert. I really wanted to go out and do something, but once I came home I didn't want to leave. It was definitely a lazy day for me. Constantly working the days leading up to Thanksgiving and knowing I had to work on black Friday, I just needed the lazy time.

It is tradition that my mom and I will go to a spin class Thanksgiving morning and then afterward to Starbucks. I always feel a good workout before a big event/meal is needed because then I don't feel guilty! Definitely was a much needed workout and we had fun looking at all the black Friday deals while having our Starbucks. If you notice in my title I said flop because well this year our turkey was not very good. We thought it looked sick when cleaning it. I did my usually stuffing aromatics into the cavity and stuffing fresh poultry herbs into the breasts and cavity. Rub down in olive oil, and season with salt and pepper. Well I saw somewhere to cover the breasts with tin foil and then the last hour of cooking to take the foil off and let the top brown. They said this keeps the breast moist and from drying out. Made sense right? FLOP! Turkey breast was DRY and my bird still wasn't finish cooking after almost hitting the 5 hour mark and was only a 12 pound turkey. We picked through the breast with the parts cooked but basically felt "weird" eating it and just chucked the bird out. Major flop :( But I'm still here to show you the other wonderful things we had and already have a fresh turkey to cook up tomorrow since my dad will be home. He can take control and hopefully turkey #2 will come out delicious! I love my turkey and cranberry sauce.

I'm going to start backwards. Tuesday I made our dessert, Butterscotch Apple Cake from the lovely Noble Pig. I've had this recipe bookmarked for several months and that when I knew this was a Thanksgiving dessert. I decided to cut the recipe in half since my family is small, 3 people. Worked perfectly. I used a pink lady apple and granny smith apple. The combo worked perfectly with the cake, and my mom loved it so much she wants me to make this for her bunko coming up on December 14th! Good because I already want another piece! At least dessert made up for the bad turkey!

Don't get me wrong I like a good glass of Pinot Noir, but give me a good glass of champagne and I can't stomach it! Just something about the taste that I don't care for. I think it is over-rated! Well my mom's good friend mentioned this great Prosecco she picks up from Trader Joe's for only $6.95 a bottle and said she goes through a bottle a night. Yeah she likes to drink a little ;) I knew about Prosecco because they use that in a Peach Bellini and I know those are delicious. We picked up a bottle along with some pomegranate juice to give a splash of color to our drink. Umm can I say I found my new favorite holiday cocktail? Prosecco with a splash of pomegranate juice was delicious! It was a very smooth sparkling wine, and the juice took away from the slight dryness from the Prosecco. Yeah I usually don't drink 2 glasses but that day I had 2 glasses!

With my first drink I also had a mini appetizer. I was going to actually eat this with my meal but figured it be way too much all at the same time. I was already a bit snacky so I sat down with a bowl of my tomato cucumber salad and a pumpkin cornmeal muffin!

But my snack didn't stop there. My dad was heading into work soon and I promised he could have his dessert then. I figured it was time for my dessert too and then my mom said, "Well if everyone having dessert, I want mine too!" Okay let's have dessert!
I heated the cake for a few seconds in the microwave, 
so it be warm as if it was fresh out of the oven!

It is Thanksgiving and I want the real stuff! This was DELICIOUS vanilla ice cream. 
It was light and rich. Easily scoop-able straight from the freezer.

Which brings me to the "main event." The turkey that was a flop! I'm so glad everything else turned out delicious or else we would of been scrambling up some eggs for dinner.


I love the fall colors. I added a gala apple, sweet onion, carrots, lemon, and celery. 
This was stuffed into the turkey cavity. Perhaps it was over stuffed?
 
After all our snacking, we realized it was almost 5 hours and the turkey was still cooking! We couldn't wait no longer. I guess a few drinks down, anything looked good at this point to eat. haha.

Looking at this turkey now, it is still PINK! We need a meat thermometer. 
I'm glad no one got sick off the turkey.
 
The turkey breast were so dry.. we almost used up this whole bottle to hide the 
dryness. Verdict? I missed the jelly cranberry sauce, it has a more 
pungent flavor and I don't need to use as much.
 
We were so hungry, that I forgot to take a picture of my plate before digging in! 

Basically licked clean! So something must of been good ;)
 
This was one of our sides, roasted brussel sprouts and carrots. 

We also had baked sweet potatoes with butter and cinnamon! I totally forgot to take a picture of this, but I think you get the idea! ;) It was nice spending the time with my mom! We finished watching up all the Biggest Loser shows from that week and just relaxed. I was so tired but I ended up staying up to watch the Beyonce concert on TV. That girl can sing! I was literally out by 10pm and up early to get ready for the Black Friday shoppers! I've been working in retail for 6 years now and I KNOW what to expect. It was a very successful day and this holiday season will be very busy. I'm just happy to see people out shopping and spending money! I hope this makes for a better year economy wise in 2010!

Happy Thanksgiving!

Today is the day, Turkey day! I hope everyone has a wonderful Thanksgiving, a great meal, and is able to share it with family and friends. Today I'll be enjoying that moment with my one and only.. mother! Dad has to work but he doesn't seem to mind since he isn't a huge "turkey" fan. I just keep telling him he is missing out on everything else I'm making. ;) I will share everything from today sometime this weekend. I'm going to enjoy my day off because the next 2 days I have to work, and it will be BUSY!!!! Black Friday.. Oi Vay! Everyone has been writing about what they've been thankful. I didn't even ask myself that question till now. I'm thankful to have my health, mentally and physically. I'm thankful I do have some of the best parents a daughter can ask for, and I have the friends I need that are here for me no matter what! I'm thankful that my boyfriend is "safe" in Iraq and will be home shortly, either Christmas Day or in January, I know I'll see him soon. I'm thankful that my boyfriend loves me and misses me, as I do the same for him! In the end, I'm thankful for my life at this very moment. Yes it has it up and downs, but I'm here, healthy and happy no matter what! Since I just started blogging this summer I'll show you a quick recap of my Thanksgiving last year (2008). It was my first Thanksgiving with my boyfriend and I was invited to have dinner with his family. I couldn't come empty handed and I had to bake a cake. I asked our good family friend if we could bake together and make some delicious European/family recipe cakes she has. These are secret recipes which I can't reveal but I can show you the amazement of them.
This is Doina and she is an amazing baker. I've learned so much from her! Not the best picture.
This is a Vasinka Torte. This was my father's cake. It has a walnut sponge cake layer, with a walnut-chocolate, orange zest filling layer in the middle, topped with a caramel meringue. Adding a finishing touch... Caramelized Sugar! THIS WAS AMAZING! Not only was it easy to make but it was a very light cake. Chocolate, walnuts, orange and caramel was a great combination of flavors and taste together. I wish I had a slice to show the layers, but I don't! Dobos Torte! I've seen this cake on several blogs and was amazed people know about this cake. It is AMAZING! 8 layers of a sponge cake, with a butter cream chocolate frosting in between, and the caramelized sugar on top.. AMAZING! This recipe is still different from the ones you see posted online, but they also look like they would taste just as good. This was for my boyfriend's Thanksgiving cake. The cake went well with the entire family! Along with the cannolis. ;) Here is a slice. I wish I could grab it through the screen!!

I have a secret!


I feel like a kid again when I'm able to still have secrets. Holding onto secrets always makes me feel like I'm special, but today I'm going to share my secret with you because I feel like it! I recently won my first cookbook giveaway from Cookie Madness. The giveaway was for a new cookbook coming out by Camilla Saulsbury. She's been on Food Network's Ultimate Recipe Showdown and won best cookie recipe! She also has her own food blog, Enlightened Cooking. I usually never win ANYTHING and when I saw an email I won The Ultimate Shortcut Cookie Book, I was smiling from ear to ear. I was so ecstatic. I always wish I would win something and never been that lucky. This contest finally gave me hope in winning for the future! I can't wait. Camilla also has a blog featuring the Shortcut Cookie Book and updates it frequently with TV appearances and recipes!


When I first received the book I was a bit disappointed to find all the recipes either used a boxed cake mix, brownie mix, pre-made cookie dough or cereal. I'm not a fan of the ingredient label you'd find on those typical boxed ingredients from your typical supermarket. I took a chance to study the book and read through some of the recipes. I bookmarked the ones that appealed to me. I still had to give this book a chance because it offered 745 different recipes! That is more then 2 years worth of recipes. Low and behold UFC was coming up and everyone asked if I could bring a dessert. First I said I'm not really in the mood and then I remember of the cookbook and the short cut recipes it offered. Went through the recipes I bookmarked and found the winner. Peanut- Butterscotch Fudge- Filled Bars. What is my secret? Well not that I used a shortcut recipe.. but what I used in the recipe that is a secret. I didn't have any boxed brownies in the house, so I had to go do some grocery shopping. My main grocery shopping is at Trader Joe's. Took a stroll down their baking isle and remember they had boxed mixes. I knew the ingredient labels would be a bit nicer then the ones you'd find at your typical supermarket. They had No Pudge brownies, regular brownie mix, AND gluten free brownies. I put the gluten free brownies in my cart and happily went on my way! They would never know I'd use a gluten free mix, I'd keep it a secret! It tastes just like regular brownie mix but without the stomach ache from the gluten that I tend to have every so often. Hey I have to enjoy it too!

The secret! 
The verdict? They loved them. They were exceptionally sweet but the peanut-butterscotch fudge was the winner. It had the creamy peanut butter flavor with the brown sugar smell of butterscotch. The gluten free brownie crust worked well for this dish because it wasn't as moist, and held the bars well together. These are best at room temperature to enjoy. They only way they will ever find out about this secret is if they read my blog. ;)

 So I take back about my disappointment of the shortcut cookie book. I love it! It is one of those books you can pull out, find a recipe, and make up right away when you need a dessert in a pinch. Especially when you are baking for a large party, quick and easy desserts that taste delicious are always a bonus. They will think you spent many hours in the kitchen baking but in reality with prep and cook, one hour later a delicious dessert is done and ready to enjoy! The Ultimate Shortcut Cookie Book makes a great addition to anyone's cookbook library and also a great holiday gift for the upcoming celebrations! Plus the recipes in this book make for some fun holiday baking! I would just like to thank Anne from Cookie Madness for having such a great giveaway, and for the wonderful cookbook Camilla has created. Plus it came autograph which makes it even better!

Sweet Potato Oats


That's right, I had sweet potatoes in my oats one morning and it was DELICIOUS! I still had leftover sweet potato pureed from my Macaroni and Cheese, and I wasn't letting it go to waste. I topped it with half an organic banana and a new nut butter, called Nuttzo. The oats were creamy from the sweet potato pureed which paired well with the sweetness of the banana and the nuttiness of the Nuttzo! Guess what, I still have leftover sweet potato pureed and I'll probably be making these oats very soon!

 
Sweet Potato Oatmeal By Fallon  
Ingredients:
1/2 cup or 40g of old fashion oatmeal
1 cup of water
1-2 heaping tablespoons of sweet potato pureed
1/2 tablespoon of chia seeds
1 packet of stevia
Pinch of Cinnamon
Unsweetened vanilla almond milk
Toppings: 1/2 banana and 1 tablespoon or 15g of Nuttzo ( or nut butter of your choice)

In a pot, combine the oats, water, potato pureed, chia seeds, stevia, and cinnamon. Bring to a boil making sure everything is mixed well and incorporated smoothly into the oatmeal. Once to a boil, bring the heat down to medium and stir making sure nothing sticks to the pot. Once the oats look done, meaning the water has cooked away, add a few splashes of almond milk. Mix well and then turn off the heat. I do this because it gives the oats a chance to cool off, and come together to make for a creamy, delicious bowl of oats! While the oats cool, I like to smear some nut butter on the bottom of my bowl. It gives me something to look forward to knowing I'm almost done with my meal, but has a delicious surprise at the end! You should try that. ;) Next pour sweet potato oatmeal into the bowl. Slice 1/2 the banana on top and a tablespoon of nut butter. DIG IN and ENJOY!

Nuttzo has hemp and flax seeds, as well as a bunch of different nuts blended altogether. It is awesome!

Dad calls it a tree, I call it brussel sprouts!

Howdy Howdy! Had a great day off today running all over town doing errands! Not relaxing much but I'll worry about that on Saturday... since I'm off again. Not really a fan of split days off but it sure is nice to have at least 1 weekend day off. Working in retail, basically this is the calm before the storm before Black Friday hits. One week to go. I can't believe Thanksgiving is already here and before I know it, Christmas will be here too. Honestly, I'm not ready for the holidays. I love this time of the year but I'm really in no mood to fuss. I don't want to put the tree up, decorate, bake, nada. In the end I'll more then likely be forced to do all that and just deal with it! When will I get out of my slump? Maybe once my man shows up I'll turn around and be ready for the holiday! Speaking of Thanksgiving, I quickly put together my small menu for next weekend this morning because my dad is working, so it will just be my mom and I. I like to keep it simple, roasted turkey with aromatics and olive oil, baked sweet potatoes with butter, brown sugar and cinnamon, whole wheat vegetarian stuffing, and sauteed brussel sprouts with shallots, pecans and dried cranberries. Plus dessert that I decided to cut the recipe in half so we don't have so much cake. How does Butterscotch Apple Cake sound with Green and Blacks vanilla ice cream on the side? Umm yeah I rather have dessert then turkey!! Check out these brussel sprouts! Our Trader Joe's been carrying them on a stalk for about 2 weeks now. We just bought our third stalk today, and surprisingly we aren't brussel sprout out yet! They are so delicious fresh off the stalk. We mostly been steaming them and eating plain. Although roasted sprouts are amazing! That why I decided we need brussel sprouts in our Thanksgiving meal. I've never had them sauteed on the stove top before but it sure sounds yummy along with pecans and cranberries. I'll be sure to blog about this experience! Anyone else love their brussel sprouts? How do you usually cook them?

Never knew it was soo difficult to find a muffin recipe!

Hey guys! It feels like forever since I've made a post. These last 2 weeks been pretty rough for me in the sense I haven't talked to my boyfriend. It is really driving me up the wall, and I wish I could just hear his voice. My appetite is all over the place, not eating full meals and instead have mini-meals when I feel hungry. The gym and my workouts really help me out, I'm so glad I have that to resort to. I love my best friend who is here for me all the time! I try to meet up with her to go for a walk with her and Mason (her 3 month old son!). My parents are really supportive and are trying their best to keep me happy. I just know who my true friends are and who really does love me. At the end of the day, no one else will be able to be like that and I don't want to waste my time. Again, I'm really fortunate to have what I have.


 
I'm trying to keep myself busy and my mind off of it.. but at the end of the day none of it works. I never thought I'd come this low to feeling this down. It sucks. I'm not happy and I'm very lonely. Which brings me to this blog. I'm really glad I started this blog. It gives me something to look forward too. I love all the comments my readers leave me. Thanks guys! It cheers me up and makes me feel good about myself because someone out there is reading this blog. It another thing that keeps me going and staying positive!

With all these emotions flying around, cooking and baking are flying around too. I have several events coming up and I have no clue what I want to bake or cook. I'm very undecided on everything I try to choose. Like tomorrow is a meeting at work to prepare us for the holiday! It the first one we have had in over 3 years and we always did a pot-luck. Since the meeting is at 7 am I wanted to make something that is a breakfast type item.. Muffins! Wow can I tell you it took me forever to decide on a muffin recipe? Nothing was calling my name. At one point I was like forget it I'm not making anything. I finally looked on the Cooking Light website. This was my final resort and I found it. Peanut Butter and Honey Muffins! I didn't even have to make a trip to the grocery store for ingredients because I had "almost" everything on hand.

The full recipe is HERE. I made several adjustments because it what I had in my kitchen! Gotta be flexible sometimes.  

Adjustments:
  • 2/3 cup honey: I WAS ALMOST OUT OF HONEY! I barely had 1/3 cup to measure, so the remaining was filled with raw blue agave (not so raw when cooked though).
  • 1/2 cup creamy peanut butter: I used Skippy Natural. I haven't baked with a natural nut butter yet because I hear they make baked goods dry, and for a store meeting I feel that this would be sufficient enough. It is more nutritious then the fried donuts I'm sure someone will bring!
  • 1 1/2 cups fat-free milk: I think milk is yuck, let alone fat free. My parents had organic 1% which I used. If I were making these for myself I'd use a nut milk.
I tried one after it cooled off some and they were rather interesting. The batter was lumpy and I was concerned how that would turn out in the end. They were moist and had air pockets throughout the muffin. They weren't dry, which I was almost worried about because they were lumpy. I taste the honey and not so much agave, so I don't think they will notice. If anything the star of this muffin is the peanut butter!! Now I can enjoy something at a store meeting since I usually don't eat anything! Can't wait to try another one tomorrow.

Macaroni and Cheese

The weather is cooler now and I love comfort food, or pasta! Although I don't like the cold weather or being cold, I'm glad I am able to enjoy some great produce that is in season. One of them being is gourds aka squash! In my pantry I have several cans of pureed squashes except for the sweet potato pureed. Other then that it either pumpkin or butternut squash. It definitely very convenient to carry these in your pantry when you need to make something in a pinch. I like to use up all the food I have and then I'm able to restock with fresh items. Brings me to the canned purees. I wanted to use them up and I wanted comfort food. I remember a few years ago I made a macaroni and cheese that contains pureed butternut squash. I remember it being very good and it was calling my name for comfort! The recipe is from Ellie Krieger on Food Network. I did some minor changes and shortcuts to get the process rolling quicker! I really think this is something you will enjoy if you like cheese and you like squash. Perfect comfort meal!

Macaroni and 4 Cheeses (Adapted from Ellie Krieger)  
Ingredients
Cooking Spray
1 pound bow-tie pasta
20 oz of canned butternut squash (My can was only 15 oz, the other 5 oz came from a can of pureed sweet potatoes)
2 cups of 2% reduced fat milk (This is what I had on hand, use what you keep in the house)
6 oz of shredded extra-sharp Cheddar and Monterrey jack cheese (I bought as a medley already shredded, little short-cut)
1/2 cup part-skim ricotta cheese
1 teaspoon sea salt
1 teaspoon powdered mustard
1/8 teaspoon cayenne pepper
2 tablespoons plain panko bread crumbs
2 tablespoons grated Parmesan cheese
1 teaspoon olive oil

Preheat the oven to 375 degrees. Coat a 9 x 13- inch baking pan with cooking spray. Bring a large pot of water to a boil. Add the pasta and cook until tender but firm, about 5 to 8 minutes. The pasta will cook more in the oven when it mixed with the sauce. Drain and transfer to a large bowl. Meanwhile, place the pureed squash and milk into a large saucepan and cook over low heat, stirring occasionally and breaking up the squash with a spoon until its defrosted. Turn the heat up to medium and cook until the mixture is almost simmering, stirring occasionally. Remove the pan from heat and stir in the Cheddar, jack cheese, ricotta cheese, salt, mustard and cayenne pepper. Pour cheese mixture over the pasta and stir to combine. Transfer the pasta mixed with the cheese to the baking dish. Combine bread crumbs, Parmesan cheese and oil in a small bowl. Sprinkle over the top of the pasta. Bake for 20 minutes then broil for 3 minutes so the top is crisp and nicely browned.

Definitely needed more extra-sharp Cheddar but it sure
made the process go by quicker.
 
I love this pasta! It has a good whole grain taste and extra filling. 
Goes well with fall dishes and anything with SQUASH!
  The sauce thicken up nicely and was a bit cheesy.  
  My favorite part of the dish, are the corners, burnt crunchy topping!
My Thoughts:
  • The original recipe calls for frozen squash, which you can use but I remember it taking FOREVER to thaw out. They tell you to use it frozen and combine in milk. I don't recommend it because it a mess, milk is everywhere and it takes longer. The canned purees took a few minutes to combine and made the dish come together quicker.
  • I used the shredded medley cheese for a short-cut. There was more white cheese in the bag then extra sharp- Cheddar. Which I was concerned about but at the end of the day, I don't need all this extra cheese in my fridge. It would definitely give the dish a sharper taste and would contrast nicely with the squash. That is up to the cook ;)
  • I told my dad I was making MACARONI AND CHEESE! He thought it was the real deal, until he tried it. Yes it has a squash taste and it very gourd like. He didn't enjoy it. I don't recommend this dish for someone who isn't a fan of squash, they may be disappointed because they expected real MACARONI AND CHEESE! ;)
  • I was debating to add broccoli but didn't. I just steamed and added to the side instead. Next time adding some spinach or broccoli would not be a bad idea.
This meal lasted a few days between my mom and I. We loved it. Went well with steam broccoli or a side salad or both! Definitely cured my comfort food for pasta and kept me warm and full! The original recipe at this link. I rushed to get this out this morning. Now it is time for me to go run some stairs!! Been over a month since I did this one. Looking forward to it.

Apples, Chocolate, Caramel.. I'm in love!

I love apples. Most importantly I love a good caramel, chocolate covered apple! I've tried several brands but so far I still like the ones from Rocky Mountain Chocolate Factory. I'd still like to try the Mrs. Prindables apples. Those look out of this world! I also recently discovered that my Wholefoods makes their own apples for only $4.99! They make a s'mores that has my name on it for when I'm ready to have a yummy treat! Okay so here is the deal. My mom came home with this HUGE apple from Costco. She couldn't pass it up and I can see why. It looks really good. Right? 

The apple was massive, it looked so good. I kept it in the fridge till I was ready to dig in. I honestly can eat a whole chocolate covered apple by myself, but they are also not usually this large. So I split it with my mom. LOL. I sound so nice ;) When I was ready to cut into it, I made sure to let it sit for about 30 minutes to become room temperature so cutting would be easier. 

Let's just say the apple looked better then it tasted. I wasn't happy with the ingredient list labeled on the container, but that probably the only way to keep these sort of apples fresh for so long in a store like Costco. The apple had an odd taste? Not something I can describe, chemical taste basically. 

I did find my favorite part of this apple. The whole bottom layer was thick chunks of chocolate and caramel! I cut it all around and munched on that. My mom also agreed that it was the best part and the apple pretty much sucked! Has anyone ever made their own caramel, chocolate apples? Any recipes to share I'd appreciate it! I do have this recipe bookmarked from Emeril Live, back in the day. These looked so good when I watched him make them. I'm tempted to make them, but I don't want them around the house. I can EASILY give them away if that is the case. I never have a problem with that. LOL. Or I may just go buy the s'mores apple from Wholefoods, and save the kitchen hassle.

Keeping it Simple: Roasted Vegetables

Roasted vegetables are honestly amazing. Taking a simple vegetable roasting it with olive oil and some seasonings really brings life out of the vegetable. It is simple to make and adds a rustic touch to any meal. You can make a lot of roasted vegetables, any combo you desire and have leftovers for several days. Which is what I usually do! I know I'll be able to have a healthy meal in no time with vegetables already cooked and added to anything I have on hand. This is especially helpful when I'm working 9 hour days, I can bring a lunch to work that is healthy, delicious and filling!

The eggplant absorbs the flavors like a sponge, and the tomatoes
are sweet and pop in your mouth with tons of flavor! 
In this mix I roasted up some cherub tomatoes, eggplant, and fresh garlic. Drizzled with olive oil and sprinkle of Italian seasoning. I roasted it in the oven for 25 minutes on 425 degrees. I added it up on top of spaghetti squash and a hefty serving of steamed brussel sprouts, and a mixed green salad on the side. Where did I eat all of this? Well work of course!

Tis Friday night and I'm catching up on things around the house, that I didn't do all week! The only thing I can't do is laundry because our washer is broken!! My parents bought front loaders and we won't be receiving them till Thursday. OH BOY! I plan on seeing The Christmas Carol tomorrow. I hope that gets me in the holiday spirit! It looks really cute.
