Tostada, chocolate treat, and fruit salad!!

WOW! So it really is already September. Where in the world is the time going? The weather has already changed outside and the sun is already starting to set sooner. I love the weather change because now I can workout outdoors! This morning I ran up and down stairs 40 times (80 altogether) in 29m:43s. Is that good? I think that awesome and I can't wait to beat that score! It's much harder then you think.

When I get myself focused on eating healthy and making sure I'm eating well rounded for nutrients, I get creative in the kitchen. I'm always making up something new! That way food never gets boring and dull. This is the part of my blog where I balance a healthy lifestyle. I may talk a lot about baking and all kinds of desserts, but I don't necessarily always eat them. I've learned to control myself. Moderation right?  Look at my father, he has high cholesterol now and loves when I would bake. It something to be consumed sparingly! Except when it involves ice cream, chocolate or marshmallow... I melt and get a little too carried away! It happens sometimes ;) I know I'm  going to the gym the next day to balance it out! I always like to balance a diet of 80/20. 80% clean eating and 20% are my cheat items, which usually happens once a week.

My creation this time was a tostada, but an egg white tostada! This is a little too heavy for me to eat in the morning, but definitely makes for a great lunch. Like I did. Really simple dish that took me 10 minutes to prepare and cook. Loaded with protein, good fats and veggies, you can't go wrong! It is a nice change.

Egg White Tostada By Fallon   
Ingredients
1 teaspoon of Extra Virgin Coconut oil (used to heat up the mushrooms and onions, and cook the egg whites)
3 egg whites
Mushrooms
Onions
Goat Cheese (I like the soft, herbed kind but any cheese will do)
2 mini corn tortillas (sprayed with cooking spray and sprinkled with sea salt)
Refried beans (you can made homemade, but I used the ones from Trader Joe's)
Salsa Avocado

First preheat the oven at 400 degrees to crisp up the corn tortillas. Spray them with cooking spray and sprinkle sea salt on both sides. I place them in the oven checking on them frequently so they don't burn and I keep flipping them around. Once the edges start to curl up and the tortillas are getting golden, you can take them out and let them cool. They will crisp up even more. This is how I make my own tortilla chips and strips when I'm feeling Mexican food! So much better then the bagged chips. Preheat a small nonstick pan with 1 teaspoon of coconut oil to warm up your mushrooms and onions. I had leftovers from the night before and used them for my egg whites. Just a simple sauteed will do. Once they are heated in the pan you can beat up your egg whites till they form bubbles and season. I use a little salt, pepper and sweet paprika. Mix and then poor into the heated pan of mushrooms and onions. I scrambled them till they just set and slightly over done. I shut the pan off and sprinkle on my goat cheese. While the cheese is melting into the eggs, I spread the refried beans on the tostadas. I used about a tablespoon for each side.

Ready to season/beat my egg whites and 
get my mushrooms and onions warmed up.
 
The 1 teaspoon of coconut oil goes a long way when cooking. And no it 
doesn't taste like coconut when you eat anything cooked in coconut oil!

To plate, take a tostada bean side up, put the eggs on time. Then I sprinkle on my salsa and chunky avocado. Then top with the other tostada bean side down.

The crunch from the tostada and the creamy goat cheese, I loved it. The flavors went together well. If I had spinach, I would of definitely added that in as well! Red and green bell peppers would be good too. I just can't eat them for their high acidity. :(

Usually after a meal, I have a urge for something sweet. This is something I'm trying to control, but it really isn't easy! I'm a chocolate girl and I love nut butters! What is better then taking a square of dark chocolate and a smear of almond butter? NOTHING, but pure satisfaction. I like this sweet dessert after a meal, it definitely is a treat. I have some Xocai chocolate leftover, which I decided is really good! I like the fact that they are individually wrapped and they are the right portion. I don't know if I feel the "benefits" they provide, but they are definitely delicious. I'm getting low on my chocolate supply!

Just like a peanut butter cup, but 10x better! Doesn't have any of that fake taste peanut butter. And I use to eat peanut butter cups all the time! Crazy how taste buds change over time. Almond butter is the way to go!

It is Saturday night as I begin to wrap this post up and I'm going to a BBQ! What is everyone else doing for their Labor Day weekend? This is probably the only BBQ I'll be going to since I'm actually working the holiday on Monday. No biggie, I like the extra pay on my paycheck. ;) So I'm bringing my usual to the BBQ, a fruit salad! Made it this afternoon, spent an hour in the kitchen washing and cutting all the fruit. It has pineapple, honeydew, watermelon (think the season is almost done), blueberries, raspberries, blackberries, strawberries, and kiwi! It is always a hit and I know everyone enjoys it, so I enjoy making it. Anyone else bringing fruit salad? LOL
