I Keep Saying I’m 25 but Really I’m 26!

Birthdays come and go. We all get older and we all say, “Oh I don’t want to celebrate.” Well I know I’m one of them but deep down in my heart I know that it is a good excuse to just go out and have fun. Drink, fun dinners, silly laughs, dancing etc. Just today I had a compliment, someone thought I was 20. Umm thank you! Hehe. I get that a lot actually and I’m taking it!

My birthday was on July 30th and I actually had a weird fear of turning 26. In 4 years I’ll be 30, is what I kept repeating in my mind. Well it happened, I turned 26. I think I will be okay. This birthday was probably one of the best birthdays ever. I felt like a princess the whole day and it was the people I surround myself with. I never felt so good and so loved. Thank you to everyone who came to my dinners and had a few drinks with me. Thank you for the fabulous birthday cards too!

I know it has been a minute since I’ve made a post. I always use the excuse I’m really busy but I’ll just be honest. I don’t have the heart of cooking like I once did. I try to continue loving it and blogging about what I’ve made but I had to force myself to do it. It just wasn’t feeling right. I don’t cook as much as I use too. Thank goodness my mom has learned how to cook because I’d be drinking smoothies for dinner every night! I want to change the feel of my blog. I want you guys to know my personality and who I am. I tend to be very random and my posts will become very random. The blog will still focus on food but I’ll add in other tidbits like workouts and cool projects I’m working on. How does that sound? Perhaps a blog name change will be in the future as well!

My favorite Spinach and Mozzarella Turkey Burgers and honey mustard chicken.

Honey mustard glaze: dijon mustard, honey, olive oil, parsley, salt and pepper. Season raw chicken with salt and pepper, grill and then glaze chicken while grilling.

The best ice cream cake ever. It had a layer of vanilla ice cream, brownies, and a buttery toffee ice cream with huge chunks of heath bar and swirls of caramel. Whip cream icing and sprinkles! Oh and my Happy Birthday Fallon was in fudge, not the icky artificial frosting stuff! <3

I can’t believe it..

I’ve been so wrapped up with work and having fun at the pools I forgot that Monday is The Secret Recipe Club reveal for Group B. Shoot!!!! I ran to the store last night to get a very special ingredient to make some “drinks.” Oh yeah!!

I also just bought a new laptop like 2 days ago and I’m trying to get everything downloaded and set up. Windows Live Writer just happened now and I’m about to go install Picasa as well. All my important blogging tools. Winking smile I must say though this new laptop is amazing!!

It is also going to be a laid back weekend, so I’ll have time to work on my recipe later. I have to attend a funeral tomorrow. A really good friend of my family's passed away in a plane crash. It is hard to believe how quickly life can be taken away from someone. The family has been in my prayers all week and this Sunday will be full of love and prayers for the family and to celebrate the great person Chris was. Sigh, life is just too valuable.

Heading to a female cross fit class this morning and then a little work and a whole afternoon evening to myself. Love it!

Slowly Updating

Hey Guys and Gals! I did some blog work this morning, basically updating the recipe page. Been about 5 months since I touched that. My bad! I also added some new sections like Gluten Free and Bars || Brownies. I’m starting to get quite a collection of recipes and it was necessary to give Cookies its own header. ;) I need to do some more sprucing around here. Anyone know of any cool blog designer, that can make me some new headers and change up the colors here? Email me, xladyf54(@)gmail(.)com.

I guess you could say I’m doing okay. I really feel like I could be better. I’m very lonely and when my days off come around it really hits me. At least if I’m at work I’m around awesome people and I’m always busy talking to customers, so my mind is off the lonely factor. I really want to get out of my funk SOON! I guess you could call it depression? I just want to meet single people and go out for drinks and awesome dinners. That is all I’m asking for. Let’s just say, Las Vegas is a hard city to meet people up for coolness like that.

On a much more happier note, I joined a Cross Fit gym here in Las Vegas and will be starting that on March 19th! Fitness is a huge part of my life and is keeping me strong. I look forward to trying a new workout and I hope I can do pull ups without any assistance sooner or later.

Looking Forward to a New Year

What a year this has been. Started off full of excitement, life changing and with love. Which slowly ended abruptly, somewhat unsure with what went wrong and a lost for love. I've had a few months to be back home with my family and friends, newly single and you know what I'm kind of liking it! I feel the love and appreciation from everyone I know. It is really comforting and is what keeps me happy.

I'm so glad 2012 is going to be here tomorrow. I don't know what it will bring but all I know is it will be a great year. For once I'm not setting any goals. Somewhere in 2011 my goals were lost and I didn't stay true to my roots. In 2012, I want to just go with my heart and do what I want, when I want, where I want. I'm trying to find who I am again and working on myself.

The best thing that happen to me in 2011 was finding a new job that is full-time. I love my new job so much. Yes, it keeps me busy (hence blogging has been slow) but keeps me on my toes. I believe you should be happy with everything you do and having a job you can enjoy daily without bickering about is one of them.

I hope to get back to blogging soon. I'm thinking I need to come up with a schedule so I'm at least posting once or twice a week. I want to thank all my readers and followers for staying around and supporting me these last few months. You guys are awesome!

I want to wish everyone a Happy New Year! 2012 will be the year for unexpected things. Okay I'm just saying that because I really want something cool to happen!

Random Fallon

YAY UPDATED TO SAY I HAVE WIFI AGAIN!!

*ARGH and this is why I can't stand posting in blogger. My perfect paragraphs turn into one complete hugh paragraph! I'm sorry*

It is kind of difficult when your wifi network can't be found! Sorry for the lack of blog posts lately. Saturday morning I tried to get online with my laptop and my network wasn't available. I couldn't really spend too much time on it and so today I tried to get it working again. No such luck. I did the unplugging, the reconfiguring, unplugging some more, telephone calls etc. Almost 10:00pm and no luck. Blogging will be a bit difficult since I go back to work tomorrow and won't really get any more free time till next weekend. We have a friend coming out tomorrow to hopefully fix the problem. Luckily the router and cable modem are fine. Now if only I knew where my network was hiding!!

I had plans to share a delicious quinoa breakfast cereal my mom makes, but we never got to it. My favorite way to enjoy this cereal is with a fried egg on top. Sounds weird but just wait till you see how good it is!

I have a cookie party coming up next weekend and I'm going to make a gluten free cookie. Gingerbread just sounds delicious, so I'm trying to make out a recipe for that bad boy. Hopefully it turns out good! If you have some favorite gingerbread or spice cookie recipes post them in the comments. I'd really like to stick to the cookie being gluten free but I'm sure some substitutions won't be a problem.

Then my mom has her annual Christmas bunko next Monday. I usually will do all the cooking for it but with my new job that just won't happen. I'm planning on setting up a cheese plate and making homemade peppermint bark. I told my mom a really good chicken chili and gluten free cornbread will be just right for the occasion. And lots and lots of wine!

How am I holding up post break-up? I'm a strong chick. We all have emotions but I don't let them own me. I've realized that some things will never make sense. Like falling out of love with someone when you don't have a good enough reason. That kills me. What doesn't kill me is waking up to make sure I get a good sweat on at the gym before work. What doesn't kill me is having support from my family and my friends. What does kill me is I give my all to love and in return I get jack shit.

Pray that we can find my lost network and I can get to blogging again about food. I could just post random thoughts but that can get boring with no pictures and possibly a bit angry! ;) Love ya,

It’s Been Awhile..

I’m checking around my blog and realized my recipe index has not been updated since July. OOPS! We are already in November. Again.. where is the time in 2011 going? Just think, in about 3 weeks we will be enjoying a Thanksgiving feast. Then we will put the Christmas tree up, Santa will come and then we will ring in the new year of 2012. It is crazy, I don’t want to keep getting older!

Every year I set a few goals I’d like to achieve for the new year. I always want to achieve them but sometimes life gets in the way. My goals for 2011, well some were made and some were broken.

2011 Goals:

  • Figure out what I want to do in life!
  • Run another race, possibly a 10k or half marathon. Will someone join me?
  • Continue to expand on my blog to increase readership and have people love visiting Fallon’s Cucina!
  • Spend more time with my boyfriend and build a stronger relationship. Goodbye long distance relationship!

-Well.. I never ran any races. I simply just don’t like running a distance longer then a 5k. I’m glad I’ve accepted this realization and I’ve moved on. Instead I finally brought Body Pump into my life, which has been a blast.

-I didn’t work on my blog like I would have liked too. I’m sorry. I’m disappointed I didn’t do more but I also need to work. So finding a balance was difficult but no matter what I’ll always be around. Baby steps work for me.

-Well, didn’t see this coming. I moved back home to Las Vegas this year, after moving in with my ex-boyfriend who had lived in Texas and temporarily in Georgia, to end up back in Las Vegas single. Life is such a mystery and how much I’ve realized my life in 2011 has been turned upside down.

-I don’t think I’ll ever FIGURE out exactly what I want to do in my lifetime. I do know I’d love to marry a wonderful man and have babies. I’ve always wondered what it be like to have a bigger family. I now want this more then ever. I just can’t look for it.. and let it look for me. Right? In the meantime, I’m now employed full-time and will be starting my new job in 1 week. I’m very excited for this change in my lifetime and I need to prove to everyone I can do this. I have set some personal goals I’d like to hit a year from now.

With only less then 2 months to go I’m going to enjoy 2011. I have my family, I have my friends and you know what.. that is all you need sometimes.

Happy Halloween!

Wanted to wish everyone a happy and safe Halloween. I really encourage anyone with kids to take advantage of the safer ways to trick or treat, like at your local church or at shopping malls!

I haven't had any Halloween candy yet but a mounds bar would be delicious. Oh and I like those 100 grand bars too! In the mean time I'll enjoy this delicious chocolate almond banana smoothie!

The Unhappy Ending

Today I don’t have a delicious dessert to share or a wonderful meal I’ve made. Sadly my appetite hasn’t been blog worthy. I’m lucky I get myself to eat because I know that is important, along with working out. Getting myself to the gym, has been my life saver this past week. I call this post the unhappy ending because it is very sad. I loved him dearly and did my all for him. All I wanted was for him to be happy. I thought we communicated well but I guess not well enough. I guess if you know how to cook and make cannolis it still doesn’t matter. I’m no longer in a relationship and I’m single. Surprised? Um yes me too. Everyone I know is surprised and to give you a great reason why, I don’t really have a great reason. Call this a bad dream but it actually happened. In my 3 years of devotion and support to him, it came to an end just like that. And quickly it did.

I’m glad to have wonderful friends. They have reached out to me this past week and we have cried and laughed. My family, who I love dearly has been very supportive and helpful. I know I’ll get through this. I want to think maybe I have this one chance to make it all better but I know in reality it probably won’t happen. I’m thankful for my blog and the wonderful individuals I’ve met through here as well. I’m glad I have a way to express my feelings, happy, sad or angry.

I’m sad, confused, and surprised. Am I angry? No. If you can’t make someone happy after doing everything you could for them, then what else is there to give?

At the end of the day, I’m glad I was able to enjoy a bit of the military experience. What these people do for our country amazes me. They work very hard and give up their life for our country so we can have our freedom.

I love you all. I’m getting through this. The unhappy ending might have ended, but a whole new story is in my near future.

Happiness doesn’t come easy for everyone. So I ask you, what makes your happy happen?

Hello+Fun Giveaway

Hey Bloggers! Sorry I’ve been MIA this past week. Today is my last day of work in Augusta, until I get back to Las Vegas. I’ve been so busy with work, starting up a new side job, organizing myself to search for new jobs, keeping my exercise up, hanging out with my boyfriend as much as possible, that the laundry piles are high and I’m nowhere near done packing. I have priorities! I haven’t taken any photos of what I’ve been cooking up in the kitchen either. Maybe I’ll whip up some cookies this weekend?? Fallon’s Life in Limbo

Here is a little update on what is going on at the moment.

1. We found out where Mike’s next duty station is.. Ft. Carson Colorado!!! Totally awesome place right? Hah.. Well the plans are I’m heading back to Las Vegas because once he gets to Colorado he will be in training for his next deployment :(. I’m literally sick over this but there is nothing that can be done about it. This is his job and this is just how it goes. I’m glad I’ll be home with family and friends but once again my life is just up in the air. Looking for jobs all over again and basically just hanging low for another year. Hopefully when he comes back, we can enjoy at least 1 whole year in Colorado!

2. Fallon’s Cucina will be down for a little bit…sadly. My desktop which I use for all blogging is well dead. The blue screen of death won’t go away. Mike has tried everything he could and the only option is to wipe it out and start over. Eh.. I rather just have a new computer?

3. Well since my computer is inactive, silly me has forgotten to backup any files since I’ve moved to Augusta. Yup. So who knows how many photos I have saved and never had uploaded them.

4. I have to move again but this time on my own. I want to cry.

5. My 25th birthday was nice. We celebrated in Charleston,SC. I loved my cupcakes. I had the best manicure and pedicure for my birthday too. I have pictures to share but I’m just not in “that” mood. I wish my computer wasn’t dead on me :(

It just seems like EVERYTHING in July happened. Nothing went good for me, everything went south. I hope there is a light at the end of the tunnel soon.

Taking A Tiny Hiatus…

Hey bloggies! Just wanted to let you guys know I’m going to go on a small blogging vacation. I have a feeling the next few weeks will be crazy, I’ll be stressed (actually I already am), and busy getting life in order. Living in LIMBO is not fun. Unfortunately the Army is that way. We are waiting to hear where my boyfriend ends up going next, what will happen to me, etc etc.

I’ve been cooking (not baking) a lot and I wish I was able to bust out some posts to share with ya’ll but it is just not happening. I ended up backing out of The Secret Recipe Club for the month of August. I hope I don’t have to skip September either but we will see.

Today is my 25th birthday! Happy Birthday to me, YAY! For 2 months straight my boyfriend kept asking me what I wanted and I’m just not use to telling people what I want because no one ever buys me anything! It is just something hard for me to deal with but I figured let’s get out of Augusta and go to Charleston,SC! That is where I will be this weekend, hopefully enjoying myself and not caring about a thing. OH and I’ve been going cupcake crazy for these cupcakes, I had to get a dozen of them for my birthday. They are THE BEST!

I Don’t Know How I Keep So Busy…

I don’t know how I can keep myself so busy. I work part-time, I work out full-time (usually mornings), I cook dinner most nights unless it is leftovers, I read/comment my daily blog reading, I hang out with my boyfriend, I text my friends, call my mom etc.. That doesn’t even sound like much, but I’m so BUSY! Today is my day off, I ended up doing 2 classes at the gym, 1 at 6am and another at 9am. Then I went to Earthfare for my $2 watermelon and a very slow stop at Sam’s Club to pick up goat cheese, spinach, mini bell peppers, asparagus, fish oil pills, pure vanilla extract and a light lunch at the Vita-Mix demonstration going on this week. I literally ate a free lunch which consisted of a fruit/veggie green smoothie, tortilla soup and a chocolate ice cream with avocado. Totally delicious and very healthy. I think I was there for 30 minutes? Luckily he stopped after the ice cream for a break and thank goodness because I was full!

My birthday is a month from today and I’ll be turning 25. Oh lordie! My mom talked to me a few months ago about getting me a Vita-Mix and I couldn’t wait to tell her the deal Sam’s Club was giving. So right now she is in discussion with my father on getting me a Vita-Mix and I’m pretty sure that is my birthday present. Fingers crossed!

Oh and speaking of my mom, she is coming to town next Wednesday! I have her 5 days to myself and I can’t wait to hang out like we use to. I have a food tour planned in Athens, GA, shopping, coffee dates, healthy home cooking and happy hour!

As I type this I literally have several recipes to share. My camera is full of photos that need to be uploaded and shared with ya’ll. I just need to make time. Right after I post this I’m going to do a quick cleaning and get laundry going. I’m so glad I get to enjoy my 4th of July weekend, well I do have to work 5 hours on Saturday but it is an opening shift. No biggie!

So little ole me is very busy but not a moment goes by thinking about my blog. I love it so much and I want to do so much with it. I just need time. Why not like a 29/7 day? Is that possible? LOL

I love ya’ll and I promise a new recipe will be up soon.. but in the mean time my vacuum is calling.

May is Over Already?

Really did May go by this quickly? I can’t believe I’ve already lived a full month in a new city. Sadly it makes the time here end sooner. I’m sure September will be gone before we know it! May was a busy month for me. Still trying to get settled in, get my kitchen reorganized and rid of all cat allergies for my boyfriend. Towards the end everything was accomplished and I was able to get in the kitchen and cook up delicious meals and desserts. My boyfriend treated me to weekly dinners and we were able to explore some new and tasty restaurants.

Weight Gain Vs. Me

I try not to talk much about my personal problems on my blog because I want this to be a happy and positive place. I just feel at this time I need to write down how I feel. Being out in a new state is exciting but hard at the same time. I live with my boyfriend and he doesn’t always “get” female things, he is still learning as I teach him. ;) I don’t have any true girlfriends out here to hang out with, go shopping with and to talk about girl things! I keep in touch with my best friend in Las Vegas as much as I can. I’m always texting my mom and calling at home least once a week. As an honest person I don’t like to make people I love worry. I know after this post is published they will read this and will feel concerned, especially my mom! Rest assure I’m okay, I’m happy where I am at and just getting use to all the new changes!

Exercise is VERY important to me. It has been almost 5 years since I’ve lost 35 pounds and have kept it off. Give or take a few pounds here and there. I use to religiously count calories, workout twice a day, seclude myself from the world and wasn’t happy. I had to make changes because I realized this was not normal and I couldn’t maintain 1,200 calories for the rest of my life. I wanted to be normal, I wanted to have fun and be able to eat whatever everyone else was eating. During those years I learned a lot about food and learned nutrition is key.

Today I eat my fruits and vegetables, proteins, whole grains, non-dairy milk and healthy fats. I can say my diet is pretty healthy with the occasional dessert. Okay well that is my problem. After dinner I always have a sweet tooth. I give into that sweet tooth in the form of fruit, chocolate, ice cream, cookie, whatever. I don’t overindulge, I know what a reasonable portion is and I’m good after that. I also find that since I don’t track my calories religiously anymore, I may eat more then usual, bigger portions or munch more frequently.

Lately my problem has been figuring out my mornings. Work starts at 10am and I know I want to get a workout in before work. So I’ve been going to a 6am spin or body pump class. I wake up an hour before to eat half an energy bar, fresh fruit or a medjool date with a little almond butter. Then I come home at 7am and I would love to eat breakfast but then I’d get hungry by the time I have to be at work. I’ll try to eat something light like protein powder mixed with non-dairy milk or a smoothie blended with banana and spinach or fruit with dry cereal. Then around 9am I’ll make breakfast before work which is usually oatmeal or toast with almond butter, dried coconut and fresh fruit. I know my lunch is around noon so I’ll pack half a sandwich or a salad, with sides in the form of fruit, bell peppers and/or tortilla chips. I’ll throw in the occasional dark chocolate square for a little sweet something.

At noon I’m still not that hungry but that is my lunch time and if I don’t eat, I know by 1pm I’ll be hungry. I get another break around 3pm and that is when I eat a granola bar or dried fruit and nuts. I work till 5 and when I get home I’m feeling hungry again so I usually eat some fruit or veggies with hummus. I prep dinner, make lunches for the next day and then cook dinner. In the middle of all this I’ll snack on some raw veggies I’m cutting up and/or have a slice of salami that I use for Mike’s sandwich. Dinner is done around 7pm and we eat. My portion is always smaller and sometimes not the same thing as mike’s dinner. Afterwards I’ll clean up and I’m ready for my sweet thing.

All in all I feel this routine is making me pack on a few pounds. I’m eating more food then I need to. I think it is due to stress and it comes out in eating. If I don’t eat after 4 hours I tend to get really shaky and nervous, so I think I’m trying to fill that void by eating small snacks. I haven’t given up exercise at all. So far this week I’ve done 2 yoga sessions, 2 spin classes and 2 body pump classes. I’m glad that I’ve maintained that habit because I know how wonderful it makes me feel afterwards.

Something else that I haven’t told anyone because I don’t want to panic anyone, is in the last 3 weeks at work I’ve had 3 people ask if I’m pregnant or when I am due. This question isn’t new to me because back in Las Vegas when I worked, I was ALWAYS asked this question. It is very hurtful and makes me very upset. If only these people knew how hard I work to maintain a healthy lifestyle. The girls at work can’t believe people would ask if I’m pregnant because I don’t even look pregnant. Trust me if I was pregnant I’d be eating Ben and Jerry’s like no tomorrow and not enjoying the morning sickness. Plus I think I’d scare Mike if I started dipping pickles into ice cream! He feels bad for me and doesn’t understand it either. He tells me to not listen to those people and just move on.

I see myself in the mirror as not myself and very insecure due to those comments. It is not the best feeling at all and I want to get back to my happy point. My happy point of exercise, healthy eating, fun and confidence. I’ve done it before and I’ll do it again. I already started tracking down my meals and “estimated” calories to make sure I’m not eating 600 calories within 3-4 hours at a time. I’m a 6 small meals a day kind of girl, so I like to keep my meals around 400 and snacks around 150-200. Don’t worry I’m not compulsive to the whole 1,200 calorie restriction thing, that was the worst experience ever! When I feel like I do now, seeing what I’m eating and when I’m eating, gives me that frame of reference and realization of where I’m going wrong. I’m glad I’ve started somewhere and I can’t wait to get to my happy point any day now! I can already see where I’m getting extra calories from by adding a little here and there, this is good for my eyes to see.

Writing this out has made me feel a bit better now that I’m not holding it in. I can feel the weight already coming off! Thank you for listening to me. I don’t want to bring anyone down about this because I’m still staying positive! Maybe you will be able to relate to me or found inspiration in this. All in all I’ll get back to my happy point. As soon as I do I’ll let you know!

Now back to my regular schedule, the kitchen. I’m going to be baking up some granola/protein bars this weekend and if they turn out good, I’ll be posting about it!

Easter Care Package!

Although my parents are miles away, my mom still surprises me with care packages!! Basically she is shipping me items I had left home, but this last package was special. She added Easter candy and the CUTEST pair of Toms. Yes, this might be my 4th pair of Toms and they definitely won’t be my last. If you don’t know what Toms are check out this link HERE. These Toms are very special to me because my mom had an artist paint on the blank canvas at a local Wholefoods in Las Vegas. I told her I wanted some flower and this quote, “Live, Laugh, Love.” I was surprised with a huge sunflower to blend everything together. They came out awesome! Another reason why they are so special is my aunt, who bless her heart passed away almost 3 years ago, favorite flower. These Toms mean a lot to me and I’m so proud that I can own a pair that is unique for myself.

Oh the Easter candy. The other highlight of my package. She picked up some Trader Joe’s candy and I can’t stop eating it. I had to hide it somewhere in a kitchen cabinet so I couldn’t hear the malted milk eggs talking to me. Oh and the creamy, delicious, peanut butter eggs beat the you-know-which-ones. Love that they don’t have that fake peanut butter taste as well.  Plus all those Cadbury eggs are for Mike. We spilt one the other day and I can’t believe how sweet these are. I use to eat several in 1 sitting, now I can barely eat half. But the box of malted milk eggs I do not have a problem with. Nope!! ;) We have so many Cadbury eggs I may bake them into something. I know I could find some neat recipes here.

Our New Temp Table.

This cooler has been very helpful with our move. At first it kept our water cool during our roadtrip, along with homemade sandwiches to eat on the road.

As soon as we found our new home (apartment) this cooler became an elevated stand for my laptop so we could watch dvds.

Then last night the coolest thing happen. I complained how I was tired of eating my meals on top of a kitchen counter. I always eat sitting down, FYI. My boyfriend grabs the cooler and places it where eventually a table with chairs will be placed. I finally ate dinner without hunching over and making a mess!

I sit here now eating my lunch, Indian style and I'm so freaken happy!

Big Ouch!

Like I mentioned our household goods will be delivered around May 2nd. I ended up buying a fry pan, pot, cutting board and a knife to get some simple dinners made in the time being.

Last night we heated up a frozen pizza. Name shall not be mentioned since frozen pizzas are lame but they were on sale and helps in our situation for now. I was making a side salad of spinach, shredded carrots, raisins, green onions, walnuts, blue cheese, salami and roasted turkey. I decided to chop the spinach so salad eating would be easier.

Slice!!!! It happen so quickly that I sliced a small portion of my pointer finger with my nail. Gosh it was a total shock and it kept bleeding! My boyfriend treated me like a soldier but he told me he was being much nicer to me. Haha. I'm glad it wasn't worst then it could of been.

Oh and also when we went to borders that day. I was wearing flip flops and my feet dangerously need a pedicure. I opened the door and wacked it on my big toe causing the corner nail to break. Huge chunk it was!!

Saturday wasn't my day. Let's hope Sunday is better. I'm going to the mall for retail therapy. ;)
