St. Louis BBQ Pork Ribs

I’m at ribs again and this time I purchased St. Louis pork ribs. I’ve tried beef ribs and baby back pork ribs all with the same homemade rub and favorite BBQ sauce. I bake them in the oven at 350 degrees F and in about 2 hours you have awesome ribs.

How did the St. Louis ribs turn out?? For me not a favorite at all. They were very fatty and had a more pork flavor to them. My boyfriend enjoyed them but agreed that the best by far were the baby back pork ribs!

My life is finally getting back to normal, well normal for me. I had a wonderful visit with my mom for 5 days. We did a food tour in Athens, GA that I can’t wait to write about. It was amazing! I’ll be getting back to my usually blogging soon, just trying to fit it all in with full work days, cooking dinner, working out and finding time to chill with my man!

Love you guys and I appreciate you hanging out while I get through this slow time!

Oh and did I mentioned my birthday is now 19 days away? ;)

Quick German Potato Salad

Using my boyfriend’s iPad in the kitchen, great for pulling up recipes.

I say quick because I was in a super pinch one weekend to get to a BBQ within 3 hours. I also made a quick dessert too. I love potato salad but not the kind that is loaded with mayonnaise and eggs. I’m not a mayo fan at all and just the sound of eating a fat laden salad with all that goop in the hot summer heat at a BBQ, in your bikini just sounds repulsive! I’ve been to several BBQ’s and the options just aren’t always healthy. Sometimes you just go with the flow and bring something you know you will enjoy. I usually bring fresh fruit like watermelon!

The recipe for German potato salad comes from Wholefoods. Boy do I miss that grocery store! I’m glad they have a huge database of ingredients, so I can still get my Wholefoods experience. My father use to make a delicious German potato salad back in his day. He added eggs, red bell peppers, red onions and a red wine dressing. This Wholefoods recipe is a little different with the addition of bacon (YUM!), apple cider vinegar and whole grain mustard.

Now if you need something to bring to a BBQ this weekend I’d recommend this recipe. It is healthy, delicious and very satisfying. It won’t go bad in the heat and it will be a crowd favorite. It literally takes an hour from prepping, cooking and putting together. German potato salad is always warm and I think this is why it is such a quick dish to put together. Make it for those BBQ’s you are invited to this weekend.

Baked BBQ Pork Ribs

A few weeks ago I made baked BBQ beef ribs in my oven. We thought they turned out pretty good for being baked in an oven. I shared with you the rub I made and felt like the cumin was a bit overpowering but other then that it was pretty tasty. The rub recipe made a ton so I had to store it in a glass jar for future use.

I decided to try my baked ribs again with the same rub and use pork ribs! I’m not a fan of pork chops or a pork tenderloin but being my boyfriend loves meat I have to change it up for him. I’ve tried pork ribs in restaurants before from someone else’s plate and I actually like them. I like to eat my meat off a bone covered in BBQ sauce! But chicken on a bone grosses me out.

Long story short, the pork ribs came out AMAZING and we both agreed that these tasted way better then the beef ribs. The rub with the too much cumin couldn’t be detected at all with the pork ribs. So I can now say that this rub is best on pork and baking these pork ribs in the oven produced a moist and succulent rib!

Baked Beef Ribs with Dry Rub

There is something you definitely don’t know about me... just yet. I really enjoy BBQ food. I love the smokiness, sweet and spicy and delicious BBQ sauce that smothers your entire dish. One of my favorite BBQ items is beef ribs. Yes, beef ribs. I like a HUGE rack smothered in sauce, lots of meat and I enjoy part of the fattiness because that is where all the flavor is. Now if I ate these all the time, I’d be in trouble. Since it is a once in a while event, I enjoy every little bit of it! My hands get dirty, sauce on my shirt until they bring me a bib, and I enjoy every bit of it. I love cleaning that bone dry. ;)

It has been almost 4 months since I’ve had some beef ribs and I was starting to get that itch. Yes, I get an itch when I’m craving something. Don’t you?

Living in an apartment we could use their local grills but how clean are they really? Plus who wants to lug all the cooking tools and meats to the grill? Not me! I did some online research and saw you could bake beef ribs. I could definitely do that and that I did. I found a rub in a free Sam’s Club cookbook but tweaked it with the spices I had on hand. It made SO MUCH I have leftovers of this rub. I’m sure it will be good on some chicken breast cooked on my cast iron skillet.

Surprisingly this meal was very easy to put together. I rubbed my ribs the night before and wrapped them in foil and placed them in a glass baking dish, so all that had to be done the next day was to place them in the oven. I was working till 5pm and was afraid we wouldn’t eat dinner till almost 8pm if I put them in the oven after 5pm. So I gave my boyfriend strict orders. Preheat the oven at 4pm at 350 degrees F. By 4:15pm place the ribs in the oven. Once I came home, I started to glaze my ribs with BBQ sauce. I did this about every 20 minutes, until they were done at around 7pm. Sweet potato fries and corn bread muffins baked, dinner was done!

The outcome? For baked beef ribs, they were actually really good. Moist and tender. I was worried they would be dry but that was not a problem at all. We both missed the charred/ smoky flavor from the grill but for our current situation it does the trick. I might of rubbed my ribs with a little bit too much rub, so I’d use less next time. We have a favorite sauce we buy from the store but homemade sauces are always better. As for the dry rub, it was really tasty. It had a little spice, little sweet and boldness all around.  I would definitely leave the cumin out next time because it was too overpowering for us.

BBQ Dry Rib

Adapted from Fresh, Fast and Fabulous

Ingredients

1/2 cup dark brown sugar

1/4 cup garlic salt

1/4 cup garlic powder

1/4 cup sweet paprika

1 tbsp onion powder

1 tbsp cayenne pepper

2 tbsp chili powder

1 tbsp cumin (optional or go 1/2 tbsp)

1 tbsp black pepper

1/2 tbsp salt

Direction

Combine all ingredients in a medium bowl and whisk until combined. Rub ribs, steaks, chicken or pork. Store leftover dry rub in a glass or mason jar.
