Hoisin-Marinated Pork Chops

If I have learned anything in this past month it is that the guys eat anything and everything. Every meal better have an animal protein or else it isn’t a complete meal. Well before moving I was doing good eating animal protein twice a week and finding vegetarian options to be just as satisfying. Some nights I just don’t eat the animal protein and I’ll opt for extra vegetables instead.

Pork. Yeah, pork. I didn’t grow up eating pork, so it hasn’t always been a favorite for me. I tried eating it again since living here and I just don’t like it! BUT I do like some extra crispy bacon once in a while ;).

This marinade is great and easy to put together. It worked really well for the pork chops but chicken would be just as good! I marinated the pork chops in a plastic bag early morning till it was time to grill them outside. It was easy to put together and they cooked up in no time. I paired my pork chops with a whole grain couscous with added soy and flax and cooked it in chicken broth, steamed edamame and roasted carrots with salt and pepper.

I really enjoyed this couscous. I found it at the commissary.

I do like pork chops, but only sometimes. It definitely depends on how they are cooked and what they have been marinated in. Yours look really good though! I'll have to give it a try!

What a wonderful dinner idea. I always have pork chops in my freezer but don't always have great ideas for them. This, however, is just the ticket! Thanks for sharing. I'm so glad to have found your blog and look forward to seeing more! :) - Georgia
